Plants, Flavours and Fragrances Workshop:

Saturday April 12th 3pm onwards.

Plants synthesize a large number of aromatic components, which trigger our senses of taste and smell. During this special workshop, presented by Jankees van de Have, we will review the history of spices and flavours, we touch on the plants and why they produce these compounds, and how they can be analysed.
One part of the presentation is devoted to Australian native plants and their usage as a source of flavours. We review interesting details of widely used flavours such as Vanilla and Strawberry, from plant to industrial product as we explore the journey from plant to consumer. Many of the discussed flavours and extracts will be available in the form of samples.

Jankees van der Have is a Daussie (Dutch background, Australian citizen) and a Volunteer Guide with the Brisbane Botanic Gardens. In 1983 he graduated from the University of Leiden in the Netherlands, majoring in Microbiology and Biochemistry. Between 1983 and 2005, Jankees worked in various Research & Development positions in the food- and food ingredients industry. The last 10 years of this period he worked for IFF (International Flavours and Fragrances Inc.), as regional R&D director Europe, Africa, Middle East and India, so he certainly knows the scented side of plants! This is certain to be a sensory experience, to say the least. Feasting on the Lagoon Outlook deck will follow.
